Marshmallow Party Popcorn!

I have a tradition for my birthday to watch You’ve Got Mail sometime during my birthday week.  It’s one of my favorite feel-good movies and I started the tradition about 10 years ago of watching it as a birthday gift to myself. I love the entire cast, the sets, Meg Ryan’s wardrobe, the great quotes, the Shop-Around-the-Corner bookstore, the daisies.

I usually invite people to join me to watch the movie but am fine if it’s just me and my bowl of popcorn, quoting the lines.

Last year I made this popcorn treat from Joy the Baker that I had seen and had been wanting to make.  (Thank you, Joy the Baker, for so many good ideas.)

It was so delicious that I have now made it an official part of the tradition.  (If you do something twice, it can count as a tradition, right?)

It’s like a popcorn/Rice Krispie Treat Mashup. It’s a little messy to eat, but no one seems to mind the sticky fingers.  It’s salty/sweet and snack/dessert. The cornflakes add a good crunch and the sprinkles make it extra fun!

Marshmallow Party Popcorn adapted from Joy the Baker

3 Tbsp. coconut oil

1/2 cup popcorn kernels

coarse salt, to taste

4  heaping cups corn flake cereal

1/2 cup (1 stick) unsalted butter

1-16 ounce bag mini marshmallows

cooking spray

salt, to taste

rainbow sprinkles- a generous amount

  1.  Make the popcorn: In a medium saucepan with a tight-fitting lid, heat 3 Tbsp. coconut oil over medium heat. Add 3 kernels of popcorn in the pan.  Place lid on.  Watch/listen to see/hear when they pop.  This is your signal that the oil is the right temperature. Add the corn kernels in an even layer over the bottom of the pan. Place the lid over the pan. Allow popcorn to begin popping. When popping slows, remove from heat and sprinkle lightly with salt.
  2. Prep the pan(s): Lightly grease a large rimmed baking sheet or 2, or cover with parchment and lightly grease. Set aside.
  3. Make the Sauce: In a small saucepan, melt butter and add marshmallows (or in a large microwave safe bowl microwave it.) Stir the mixture until the marshmallows are completely melted. Remove from heat.
  4. Assemble: Spread popcorn across the greased baking sheet. Sprinkle corn flakes over the popcorn. Drizzle the warm marshmallow mixture over the popcorn and cornflakes. You may find that you don’t need to use all of the marshmallow mixture. Use enough for a light coating of the popcorn and cornflakes. Use a large spoon to evenly coat all of the popcorn and cornflakes- gently “mixing” it together. Sprinkle generously with coarse salt and sprinkles and enjoy immediately. Keep leftovers in an airtight container for up to 2 days.

For a birthday or any old day, with a favorite movie or not, I encourage you give this recipe a try.  It’s a party in your mouth!

    Popcorn is my most favorite snack and I’ve never tried the three kernel approach to test the oil. I’ll start doing that. xoxo
